Microwave- Eggless Sponge Cake recipe.

In india microwave has caught fancy of many people.... while most of the household use it only for reheating food, I have found it to be a time/life saver. You can find here some of my own experiments with microwave..as I continue exploring my culinary skills witht his machine..




Microwave- Eggless Sponge Cake recipe.



For those who are allergic to eggs like me or who do not eat eggs for religios reasons.



Preparation Time: 10 mins

Cooking Time: 10 mins



Ingredients

200 grams condensed milk (Nestle Milkmaid)

200 gms self raising flour (Maida or 150 gm of wheat flour will also do)

100 gms confectioners sugar (sugar grinded in a mixture will do as well)

1 tsp baking powder

1 tsp baking soda

100 ml melted butter or margarine

1 tsp vanilla essence

1.5 cup milk.

dry fruits/ Cherry to decorate.



Method

Sieve the flour, baking powder and soda bi-carbb together.

Mix Condensed milk, melted butter,sugar, essence and 1 cup of milk and beat well.No sugar granules should remain...

I ususally warm the milk and butter before mixing, this speeds up the process.

Add this mix to the flour.. remember you should pour the mix into the flour so as to avoid lumps.. add remaining milk if the consistency is thick

Pour the mixture into a greased and dusted 150 mm. (6") diameter glass microwaveable Dish.

Put in the dry fruits cherry's anything you like as a decoration... this will mix well when the flour rises..



Put the dish into microwave (on microwave mode only) and set it on 100% power for 5 minutes.The time may warry depending on the brand of microwave, put in a toothpick to check the cake if it comes clean its done, if it does not come clean, put in for another 2 mins.

Let it cool in the microwave for 5 min, then on the wire rack.

The cake is ready when it leaves the sides of the tin and is springy to touch. When ready, take out from the oven and leave for 1 minute. Invert the tin over a rack and tap sharply to remove.

Cool the cake.
